Viennoiseries (Croissants, danishes, pain au chocolat, brioches…) are best eaten on the day, plain croissants and pastries without filling or cream can be frozen while fresh and then reheated in the oven (5 minutes at 170 degrees), cakes, entremets and tarts will last couple of days stored in the refrigerator.
